Recipe: Bacon Mac & Cheese

Macaroni and cheese is always a great meal, but when you add bacon and use great dairy, it elevates this common dish to something really exceptional. This bacon mac & cheese will surely have people around your table asking for seconds.

 

Bacon Mac & Cheese

Ingredients:

1 box of your favorite elbow macaroni

½ pound of Applewood smoked bacon, sliced

½ cup of all-purpose flour

½ cup of chicken stock

8 ounces of sharp cheddar cheese, shredded

¼ teaspoon of pepper

1 teaspoon of kosher salt

2 cups of Guernsey Heavy Whipping Cream

1 cup of Guernsey Whole Milk

½ cup sour cream

First, cook the elbow macaroni following the directions on the box. While doing that, cook the bacon in a heavy bottom pan over medium heat until it is nice and crispy. Remove the bacon from the pan and drain it on a paper towel.

Next, add flour to the bacon oil and combine for about five minutes. Turn the heat to low and slowly whisk in the chicken stock until the mixture is combined. Add the heavy whipping cream and milk and stir. Bring the combined mixture to a light simmer and whisk in the sour cream.

Add in the shredded cheese, stirring constantly until the cheese is combined and the sauce is smooth. Add the salt and pepper and let the mixture sit for about 10 minutes.

Finally, mix the sauce with the pasta until all noodles are covered completely. Crumble the cooked bacon and any leftover cheese on top. Enjoy!
